Dark grey-brown to bright color. Its grain is of medium size (2.8 to 3.2 mm), favored for its aroma reminiscent of nuts.
This rare Russian sturgeon is a medium sized omnivorous. Like most other sturgeon types, its carries under its nose a probostics retractable with which it aspires plants, small fishes and shell fishes to feed itself. It measure up to 1.5 meters (5 ft) and weighs about 30 kg (70 lbs).
